Cowboy Caviar

Ingredients

  • 2 avocados

  • 1 red bell pepper

  • 1 bag of Somos Black Beans

  • 1/3 cup cilantro, chopped

  • 2 jalapeños

  • 1 red onion, medium

  • 2 cans of sweet corn

  • ¼ - ½ cup crumbled cotija cheese

    dressing

  • ¼ cup lime juice

  • 2 tbsp red wine vinegar

  • 1 tsp salt

  • ½ tsp ground black pepper

  • 1 tbsp honey

  • ¼ tsp chili powder

  • ¼ tsp cumin

  • 2 cloves of minced garlic


Step 1

To make the dressing, add all the ingredients to a bowl and whisk until fully emulsified


Step 2

Drain corn and beans, then add to a large bowl


Step 3

Cube avocado and finely chop bell pepper, jalapeño, and red onion – add to the bowl


Step 4

Pour the dressing over the salad and top with cotija cheese and cilantro
