Heavy Apps: Hot Chipotle Smashed Potatoes with Roasted Red Pepper Aioli

Snacks for dinner? We call those Heavy Apps.

Ingredients:

  • Dan-O’s chipotle seasoning

  • 1 large red bell pepper

  • ½ teaspoon dried thyme, crushed

  • 3 cloves garlic, crushed

  • ½ teaspoon hot sauce (or to taste)

  • 2 tablespoons red wine vinegar

  • ½ cup red wine

  • 1 ½ cup mayonnaise


Step 1

Roast bell pepper over an open flame until blackened, then let rest in a covered container for 10 min and peel most of the black parts off (leave a little for flavor)


Step 2

Boil mini potatoes until fork tender


Step 3

Deseed bell pepper and coarsely chop


Step 4

Add chopped bell pepper to a saucepan with dried thyme, red wine vinegar, red wine, hot sauce, and garlic – simmer over low heat until reduced


Step 5

Add everything from the saucepan to a food processor or blender and blend until smooth


Step 6

Toss boiled potatoes in Dan-O’s chipotle seasoning, olive oil, and a salt


Step 7

Place on a baking sheet and smash with the bottom of a cup or ramekin, then sprinkle a little more Dan-O’s chipotle seasoning


Step 8

Bake potatoes for 15 min at 400°, until crispy


Step 9

Mix together your red pepper puree and mayo (we added more Dan-O’s chipotle seasoning to the aioli too because it’s SO GOOD)


Step 10

Place your aioli in a bowl, assemble the smashed potatoes on a board, and garnish with fresh parsley!
