#SaladSZN: Citrus, Arugula, & Burrata

Citrus, arugula, & burrata… oh my! Basically the three best things in life! it’s super easy and only takes a few minutes to assemble.

 

Ingredients:

  • 2 cara cara oranges (one for slicing, one for the dressing) 

  • Arugula 

  • 1 ball of burrata

  • 1/2 fennel bulb

  • 1/4 cup fresh squeezed orange juice

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons champagne vinegar

  • 1 tablespoon minced shallot

  • 1/2 tbsp of grainy mustard


Step 1

To make the citrus vinaigrette – combine the vinegar, orange juice, grainy mustard, minced shallots, in a glass jar. Drizzle in the olive oil and shake until the dressing becomes emulsified. Add salt and pepper to taste.


Step 2

Assemble the arugula in a plate or bowl, add thinly sliced fennel, cara cara oranges, and tear a ball of burrata and spread the pieces all over the salad.

Drizzle orange juice vinaigrette over top and season with some sea salt!
