#SoupSZN: Leftover Thanksgiving Turkey

Thanksgiving leftovers are arguably the best part of Thanksgiving. We’re stretching these leftovers even further with this hearty turkey soup!


Measurements (serves 6-8):

TURKEY STOCK

  • ½ cup diced carrots

  • ½ cup diced celery

  • 1 medium onion diced

  • 3 garlic cloves, minced

  • 1 turkey carcass 

    (freeze the remaining stock!)

    SOUP 

  • ½ cup diced carrots

  • ½ cup diced celery

  • 1 medium onion diced

  • 1 teaspoon olive oil

  • 2 tablespoons of butter 

  • 3 garlic cloves, minced

  • 4 cups of homemade turkey stock

  • 2 cups water

  • 1 cup milk (directly in soup)

  • 1 cup milk (to mix with flour)

  • ½ cup all-purpose flour

  • 1 bay leaf

  • leftover turkey meat from carcass 

  • box of Rice-A-Roni Long Grain & Wild Rice + seasoning packet

  • 1 lemon

  • salt & white pepper to taste

  • Garnish with fresh parsley!


Step 1

Make turkey stock: add mirepoix to a large pot with olive oil and sauté until translucent, then add garlic. Add leftover turkey carcass to the pot and cover with water. Cover with a lid and bring to a boil for about an hour (or until the leftover meat is falling off the bone)


Step 2

Add a second mirepoix to a separate dutch oven and sauté until translucent, then add garlic


Step 3

Add strained turkey stock (save the meat but discard the bones), water, milk, and bay leaf – simmer over medium heat


STep 4

In a separate bowl, mix flower and water until smooth, then slowly add it to the soup, mixing constantly, simmer for 15 minutes


Step 5

Add a box of Long Grain & Wild Rice Rice-A-Roni and turkey meat, let simmer for 20 minutes


Step 6

Season with salt, pepper, fresh lemon juice, and garnish with fresh parsley!


 

Note: freeze leftover turkey stock, it’s like gold!
