Family Favorites: Brown Butter Pumpkin Cream Cheese Muffins

Our mom used to take us through the Starbucks drive-thru after school to get an afternoon treat in the fall and we would always get these pumpkin muffins. In true Swedish Martha Stewart fashion, she had to re-create her own recipe.

 

Ingredients:

  • 1 stick salted butter

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 tsp pumpkin pie spice

  • 1 can pumpkin purée

  • 3 large eggs (room temp)

  • 1 cup brown sugar

  • 2/3 cup pure maple syrup

  • 1 tsp vanilla extract

  • whipped cream cheese


Step 1

Preheat oven to 350° F


Step 2

Add butter to a pan on medium low heat, stirring constantly. Remove from heat once butter starts to foam and butter is a golden brown. Set aside to cool.


Step 3

In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice


Step 4

In a separate bowl, mix together, pumpkin, eggs, brown sugar, maple syrup, and vanilla. Stir in dry ingredients, then add cooled brown butter


Step 5

Scoop batter evenly into a lined muffin tin, then scoop about a tablespoon of whipped cream cheese to each muffin.


Step 6

Bake for 20-25 minutes, until toothpick comes out clean
