Family Favorites: Mom’s Lemon Bars

these lemon bars are truly a family (and friend… and neighbor… and coworker) favorite. they’re super simple & perfect for a summer treat!

 

Ingredients:

Crust

  • 2 cups flour

  • 1 cup sugar

  • 2 sticks of butter

Topping

  • 4 large eggs

  • 1 1/3 cups sugar

  • 1/4 cup flour

  • 2 tbsp lemon zest

  • 6 tbsp fresh lemon juice

  • 1 bag (14oz) shredded coconut


Step 1

Heat oven to 350° F, then line an 9x11 baking pan with lightly greased foil


Step 2

To make crust, mix flour, sugar and butter with a food processor (or pastry blender) until mixture resembles coarse crumbs


Step 3

Spread evenly over bottom of prepared pan and bake for 20 min (until golden)


Step 4

To make topping, beat eggs, sugar, flour and lemon juice in a large bowl until well mixed, then add lemon zest & coconut


Step 5

Spread over baked crust and bake for 25 to 30 min


Step 6

Let cool in pan then cut into bars
