Cheesy Chorizo Stuffed Mini Peppers
Ingredients
1 pound mini sweet peppers
8 ounces cream cheese, softened
1 teaspoon garlic powder
6 green onions, chopped
¼ cup cooked chorizo
1/2 cup shredded cheddar cheese
salt and pepper to taste
Step 1
Preheat the oven to 350 °F
Step 2
In a small bowl, combine the softened cream cheese, garlic powder, green onions, and cooked chorizo
Step 3
Slice the mini sweet peppers long ways and remove the seeds
Step 4
Generously fill each halved mini pepper with cream cheese mixture, add to a baking sheet, and top with shredded cheese
Step 5
Bake for 15-20 minutes & enjoy!
