Heavy Apps: Butternut Bacon Bites
Snacks for dinner? We call those Heavy Apps.
Ingredients:
1 medium sweet onion, thinly sliced
1 ½ cup shredded gruyere cheese
2 cloves garlic, minced
1 butternut squash (about 4 cups, cubed)
2 tsp ACV
5 slices of bacon
1 tsp fresh rosemary, finely chopped
Salt and pepper, to taste
1 puff pastry sheet
1 egg, whisked
Fresh rosemary sprigs, for garnish
Honey, for drizzle
Step 1
Add some oil to a large skillet, cook the sliced onions over medium-low heat, stirring frequently, until deep golden brown and caramelized. This will take up to 35-40 minutes. Once caramelized, remove the onions from the heat and transfer to a bowl to cool.
Step 2
Return the pan to the heat. Cook chopped bacon & once crispy, remove from the pan.
Step 3
Add the minced garlic to the pan with bacon grease. Cook for 1-2 minutes then add the butternut squash, rosemary, apple cider vinegar, honey, salt, and pepper. Mix to combine and cook for about 10 minutes – until the squash is fork tender. Transfer to a bowl to cool.
Step 4
Preheat the oven to 400 F. Unfold the sheet of puff pastry dough on a baking sheet lined with parchment. Cut into rectangles. Brush each rectangle of dough with egg wash and use a fork to pierce with holes.
Step 5
Add a few caramelized onions to the center of each piece of dough, then top with gruyere, bacon, and butternut squash.
Step 6
Bake for 10-15 minutes or until puffed up and golden brown. Garnish each puff pastry bite with a sprig of fresh rosemary and drizzle with honey!
