Gourmet Gameday: Grinder Pinwheels
Grinder Sandwich (Pinwheel’s Version)
Ingredients
4 10-inch flour tortillas
8 oz cream cheese, softened
1 cup pepperoncini, diced
about 1 head of romaine lettuce, chopped
1 red onion, very thinly sliced
12 slices provolone cheese
2 lbs of deli turkey
2 lbs of Italian cold cuts (we did coppa, prosciutto, and salami)
FOR THE DRESSING
2 tbsp mayonnaise
2 tbsp red wine vinegar
a pinch of: salt, pepper, oregano, Italian seasoning, red pepper flakes
2 tbsp freshly grated parmesan
Step 1
Add all dressing ingredients to a medium to large mixing bowl and combine
Step 2
Slice washed and dried lettuce into strips and add to the bowl with the dressing, toss with your hands until fully coated
Step 3
Prep sandwich ingredients: dice pepperoncini and thinly slice red onion. We recommend using a mandoline!
Step 4
Time to assemble! Lay out a tortilla and spread softened cream cheese over the whole thing. Then layer your meats, cheese, veggies, and the dressed lettuce. Don’t over stuff your tortilla because it will be difficult to roll and slice.
Step 5
Roll each tortilla, then stick a toothpick in the roll about an inch or so apart. This makes it easier for them to stay together! Slice in between each toothpick & serve!
HAUSTE HINT: Use cute toothpicks like these for game days!
