Green Goddess Deviled Eggs
Ingredients
6 large eggs
⅛ cup mayonnaise
⅛ cup sour cream
1 tsp dijon mustard
2 tbsp fresh chives
2 tbsp fresh Italian parsley
1 tbsp lemon juice
2 cloves of garlic, minced
¼ tsp black pepper
¼ tsp salt
Microgreens for garnish
Step 1
Add eggs to a pot and cover with water. Bring to a boil and then let boil for 10-12 minutes.
Step 2
Drain the water and add eggs to an ice bath, let them chill for at least 5 minutes.
Step 3
Finely chop chives and Italian parsley, then add to a bowl along with mayo, sour cream, dijon mustard, lemon juice, garlic, salt, and pepper – mix until well combined
Step 4
Once eggs are done cooling, slice lengthwise and pop out the yolks. Separate the yolks and whites. To the bowl of whites, cover with water and ice cubes to remove any yolk remains.
Step 5
Add the green goddess mixture to the yolks until you get your desired consistency.
hauste hint: If the color is not as green as you’d like, add a *tiny* amount of green food coloring!
Step 6
Top with one micro green on each egg & enjoy!
