Heavy Apps: Olive Salsa Verde

Snacks for dinner? We call those Heavy Apps.

Ingredients:

  • 2 oz Halloumi 

  • 20 oz Castelvetrano olives, pitted

  • ¼ cup Italian parsley, chopped

  • 1 clove garlic

  • 1 small shallot, minced

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp champagne vinegar

  • Large pinch of salt

  • Large pinch of freshly ground black pepper

  • Large pinch of red pepper flakes

  • Zest of 1 lemon

  • Juice of ½ lemon

for serving

  • Pomegranate seeds

  • Baguette

  • Crackers

 

Step 1

Evenly cut Castelvetrano olives and halloumi into a small dice, add to a mixing bowl


Step 2

Finely chop flat leaf italian parsley, add to the mixing bowl 


Step 3

Mince 1 small shallot and 1 clove of garlic, add to the mixing bowl


Step 4

Add the rest of the ingredients to the bowl and mix


Step 5

Let sit for at least an hour in the refrigerator, then taste again for seasoning 


Step 6

Slice baguette and drizzle lightly with olive oil, bake until slightly brown and serve with salsa!
