Heavy Apps: Upside Down Brie Bites
Snacks for dinner? We call those Heavy Apps.
Ingredients:
1 sheet of puff pastry
Olive oil
3 small shallots
15 Trader Joes mini brie rounds
~ ⅓ cup fig jam
1 egg
for GARNISH:
Rosemary sprigs
Step 1
Thinly slice shallots crosswise, keeping the rounds intact
Step 2
Add 15 small drizzles of olive oil to a parchment lined baking sheet
Step 3
Add a shallot round to each drizzle of olive oil, a mini brie on top of the shallot, and then about a teaspoon of fig jam on top of the brie
Step 4
Roll out a sheet of puff pastry on a floured surface
Step 5
Using a round cookie cutter or a cup (make sure it's larger than the brie round!), cut circles in the puff pastry sheet.
HAUSTE HINT: Place a damp paper or tea towel over any puff pastry dough being unused to prevent drying and cracking
Step 6
Carefully place a puff pastry circle over each brie bite, pressing down on the edges with a fork.
note: you may need to stretch the puff pastry a little more to fit over the brie!
Step 7
Brush with egg wash
Step 8
Bake in a 400° oven for about 20-25 minutes or until golden and puffy
Step 9
Remove from the oven (check to make sure the brie has fully melted), let cool for 5 minutes. Slide a butter knife or offset spatula underneath, flip over, then slide off to keep the shallots in place
