#SoupSZN: Chicken & Stars

This rendition of Campbell’s classic Chicken & Stars is basically a hug in a bowl.

Measurements (serves 6):

  • 1/2 cup carrots

  • 1/2 cup celery

  • 3/4 cup white onion

  • 1 cup chopped mushrooms

  • 1 tablespoon Italian seasoning

  • 4 cloves of garlic

  • 12 cups of chicken broth (we use Better Than Bouillon)

  • 1 parmesan rind

  • 2 lemons

  • 2 cups shredded chicken

  • 1 cup Stelline pasta

  • Finish with shredded parmesan & finely chopped fresh parsley


Step 1

Finely chop onion, carrot, celery, & mushrooms


Step 2

Add onion, carrot, & celery to a dutch oven oven with some oil and simmer until onions become translucent


Step 3

Add Italian seasoning & mushrooms, then cook for a few more minutes before adding minced garlic


Step 4

Once garlic is fragrant, add chicken broth, a Parmesan rind, and the juice of two lemons – bring to a simmer


Step 5

Add shredded rotisserie chicken and Stelline pasta – cook to package directions. Top with shredded part & fresh parsley!
