You’ll Fall for these Spring rolls

Fresh Vegan Spring Rolls…with Peanut Dipping Sauce (of course)

Vegan | Makes 8 rolls

Skip the takeout and make these easy Thai spring rolls at home. The perfect appetizer or light dinner for an interactive dinner party. Pair with a white wine.

 

Ingredients:

  • Rice paper

  • Rice noodles

  • 1 cup bean sprouts

  • 1 cup chopped cabbage

  • 1 cup shredded carrots

  • 2 Persian cucumbers

  • 1 package of extra firm tofu

  • 3 green onions

  • 1 cup Spinach

  • ½ cup Peanut butter

  • 1 tablespoon Sesame oil

  • 3 tablespoons Soy sauce (2 for sauce, 1 to toss tofu in)

  • 1 tablespoon rice vinegar

  • 2 tablespoons brown sugar

  • 1 tablespoon lime juice

  • 1 tablespoon chopped ginger root

  • 3 garlic cloves

  • 2 teaspoons Trader Joe’s chili crunch oil (and more for dipping)

equipment:

  • Air Fryer

  • Food processor (or blender)

hauste hint:

1 Feel free to switch it up – Any veggie would work

2 Make it gluten free by using certified gluten free noodles, and Tamari instead of soy sauce

3 Make it peanut free by subbing for almond or sunflower seed butter

4 Mise en place! The peanut sauce and all the veggies can be prepped up to 1 day in advance.


Step 1

Remove tofu from its package and press into a paper towel to rid some of its moisture.

Cut tofu into strips and again press into a paper towel to get the tofu as dry as possible (so it gets crispy!).

Step 2

Toss tofu in soy sauce and sesame oil and put into the air fryer for about 20 minutes.


Step 3

Check on tofu crispiness and toss every 7-10 minutes (air fryer time may vary).


Step 4

Make peanut sauce – Blend the following:

  • ½ cup peanut butter

  • 2 tablespoons Soy sauce

  • 1 tablespoon Rice vinegar

  • 2 tablespoons Brown sugar

  • 2 teaspoons of chili oil (TJs)

  • 1 tablespoon Fresh limes or lime juice

  • 1 tablespoon Ginger root (roughly chopped)

  • 3 Garlic cloves

  • 2-4 tablespoons of warm water (adjust to desired consistency)


Step 5

Wash and chop all veggies to desired size & cut. I like to slice my cucumbers and green onion into 2 inch strips, and rough chop my cabbage.

Step 6

Put rice noodles into a bowl of hot water and let sit for 3-5 minutes (until noodles become loose and soft). Strain and set aside.


Step 7

Once the tofu is to your desired crispiness, the noodles are soft, and all ingredients are prepped, you can start assembling your spring rolls!


Step 8

Dip rice paper into cold or lukewarm water (only dip until completely covered, do not hold underwater for longer than a couple seconds)

Step 9

Place rice paper on a plate, followed by noodles, tofu and top with vegetables. Fold in the sides, roll it up like a burrito, and enjoy it with your favorite sauces (I like to mix the peanut sauce and TJ’s chili crunch – can’t get enough of that stuff!)
