#SoupSZN: French Onion Soup

It’s definitely a labor of love but sooo worth it in the end!

Measurements (serves 8):

  • 5 pounds yellow onions, thinly sliced

  • 1 1/2 sticks of butter

  • 1/2 cup dry white wine

  • 8 cups beef broth

  • 2 bay leaves

  • Bundle of fresh parsley

  • 6 to 8 sprigs fresh thyme

  • Freshly ground white pepper to taste 

  • Salt to taste 

  • 1 baguette, cubed and toasted

  • 12 ounces Gruyère cheese, grated


Step 1

Thinly slice onions then add 1 stick of butter and a splash of olive oil to a dutch oven


Step 2

Add onions & cook over LOW heat for 45 min - 1 hour (yes, that long)


Step 3

Add garlic when your onions are golden brown & caramelized and cook for a few more minutes until garlic is fragrant


Step 4

Add white wine to deglaze the pot


Step 5

Pour in beef broth, then add your bundle of fresh herbs – let simmer for a few minutes


Step 6

Cube & toast a baguette, then grate your cheese


Step 7

Assemble your bowls by adding the soup, then a few cubes of toasted bread, and lots of cheese

Place bowls on a baking sheet and broil for a few minutes (watch closely)


Step 8

Top with fresh parsley!
