#SoupSZN: Sausage & Kale

This gluten free creamy bowl of goodness is so simple to make but will impress any guest.

Measurements (serves 6):

  • 1 lb mild or spicy Italian ground sausage

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 4 cups peeled and chopped potatoes

  • 6 cups vegetable stock

  • 1/2 tsp oregano

  • salt and pepper, to taste

  • 1 cup heavy cream 

  • 3 cups chopped kale

  • finish with shredded parmesan!  


Step 1

Start by peeling and chopping the potatoes, chop onion, and destem kale & tear into small pieces


Step 2

Add sausage to a dutch oven over medium-high heat until almost browned


Step 3

Add onions and cook until translucent, then add garlic

Season with salt, pepper, and oregano


Step 4

Add broth and bring to a boil, add potatoes and cook until fork tender (about 20 min)


Step 5

Turn heat down and add heavy cream & kale

(Wait until the very end to add kale so it stays bright green!)


Step 6

Top with lots of Parmesan!
