Green Goddess Veggie Board

Serves 8

We’re big fans of upgrading simple items to elevate the every day. This Veggie Board is so easy to make but is clearly better than those store bought platters!

 

Vegetables we used:

  • Mini cucumbers 

  • Mini peppers

  • Broccolini 

  • Full colored carrots 

  • Endive 

Dip Ingredients:

  • 1 avocado 

  • 2 tbsp lemon juice 

  • 1 tsp lemon zest

  • 2 tbsp chives 

  • 1 cup parsley 

  • ¼ cup dill

  • ¼ cup tarragon 

  • ½ cup basil 

  • 2 garlic cloves 

  • 1 cup greek yogurt

  • 2 tsp capers

  • ¼ tsp pepper 

  • ¼ tsp salt 

  • Drizzle of olive oil


Step 1

Cut veggies into preferred slices


Step 2

Green Goddess Dip

Add ingredients below into a food processor or blender:

1 avocado 

2 tbsp lemon juice 

1 tsp lemon zest

2 tbsp chives 

1 cup parsley 

¼ cup dill

¼ cup tarragon 

½ cup basil 

2 garlic cloves 

1 cup greek yogurt

2 tsp capers

¼ tsp pepper 

¼ tsp salt 

Drizzle of olive oil 


Step 3

Assemble your board and make sure to overfill with veggies!
