Watermelon Mojito Poptail

This cocktail is interactive, unexpected, & perfect to batch for your next summer gathering.


Ingredients:

Watermelon Juice

  • ~10 cups of watermelon chunks

  • Juice of 2 limes

  • ~20 mint leaves

Mojito

  • Lime juice

  • Simple syrup

  • White rum

  • Club soda

  • Mint (for garnish)


Step 1

To make the watermelon juice, add ingredients to a blender and blend until combined. Pour through a sieve to remove all seeds.


Step 2

Pour watermelon juice into popsicle molds – we used these! Place in the freezer overnight.


Step 3

To make the cocktail, to a glass with ice add ½ oz lime juice, ½ oz simple syrup, 2 oz white rum, and 2 oz club soda. Stir to combine, then add a watermelon popsicle to the glass with a sprig of fresh mint to garnish.

To batch the cocktail, multiply the measurements by however many drinks you are planning to make and add to a pitcher (no ice). When you’re ready to serve, pour 5 oz of the batched liquid over ice in each glass then follow the same steps as above!
